IF anyone here has a sous vide circulator, that is... You can get some pretty inexpensive ones at Amazon. I am not convinced I need one.

Sous vide enthusiasts swear it's a great way to cook steak, too. It's in a way similar to the reverse sear method: you cook it in the bag till it reaches a specific temperature, then remove it and sear quickly.
