First, the amount of condiment business they generate is tiny. Second, it's done as a branding thing. To keep THE BRAND in front of people. Third, the operative phrase is very well known. So when Natural Shrimp becomes VERY WELL KNOWN, let me know. Since their historic sales are less than $100,000, they are not to the point of very well known. Finally, all of these barbecue places you are referring to created their condiment business after they were very well known.

I was wrong on my previous post. About 100,000 chefs in America can create a good cocktail sauce.
