You act as if functionality / consistency of results is somehow distinct from wafer yield

The two are actually very distinct results.

Wafer sort simply identifies die that are, to use a term you may understand, dead at sort which are discarded before adding further cost at assembly/test. Final test (post assembly) measures performance to specification.
