labor day is a more realistic target to open!

this is good news!.......food service is tough to get up and running

lots of rules and regs to pass!.....the building dept may be slow because of reduced staff during latest outbreak....the real enemy is the
BOARD OF HEALTH.....when they sign off , it`s up and away
safety of employees, and the public is JOB #1

remember CHIPOTLE....bad produce at a few locations , damn near CRUSHED the whole company......one more month to get it all done!

one of my sisters had an italian restaurant ( about 100 employees)....always calling me about the ice machine....temp rising in the walk-in produce cooler.....electric problems...etc..etc

stop by couple times a week , and always a list

board of health always popping in ......one day they wrote her a violation for the dish washer (sanitize cycle wasn`t hitting 170 f)

wasn`t the problem of D W ....but one of the boilers in cellar had low water level.......these public officials can be pricks...but it`s in everyone`s best interest to GET IT RIGHT.
