A little more research.

So I checked wiki for the definition of forklift:
A forklift (also called lift truck, jitney, fork truck, fork hoist, and forklift truck) is a powered industrial truck used to lift and move materials over short distances.

The reason I did that was; in the video at each tank outlet into the harvest tank, there are a set of swinging gates. I'm thinking a forklift would be used to lift the net out of the harvest tank and transport it to an ice bath where the shrimp would be sorted.

Yes. Lots of questions on the ice bath, sorting, etc. One would expect that the logistics would have been worked out for those efforts.

For the 6,000 pound number, I believe I heard that was for the new model facility to be constructed next door. It was mentioned they would do 6000 lbs/week in that plant. I don't know if I heard the weight expected out of the pilot plant.
