And on the subject of gas lines and HVAC, doesn't a commercial kitchen also need a major air-handling system for venting smoke and cooking smells from ovens and grills, as well as burner-top pan cooking?

And that means a roof rework as well for the exhaust venting and air handling.

Taking a clothing store with no adequate plumbing, no gas lines, no existing suitable area for kitchen and related aspects is nott smart. I've read that the average small diner uses over 50,000 gallons of water per day - most of it just for washing dishes and cooking gear. Plus the need to install bathrooms and that plumbing. Won't be fast; won't be cheap! Nott a good choice of building to lease.

In the UK, the phrase for this is "fit for purpose". And it shure seems like a former clothing store is nott a property that is very well 'fit for purpose' if the purpose is to CONvert it into a cafe/restaurant which requires a full kitchen.

And that might well explain why, 7 months after taking the Tucson lease, there are still NO permits and no CONstruction work begun.

Butt, Guelph I bleeve was already a cafe/dining game cafe, so there's no reason that nott only wasn't up by Thanksgiving (as AMFE/FUNN had claimed), butt evidently it STILL has no permits and no CONstruction started. That ought to be a much easier CONversion than Tucson, the building for which seems unfit for purpose. I presume Guelph already has a commercial kitchen installed. If knott, then it may suffer the same prollems as the Tucson leasehold.

And of course there have been no updates on Waterloo, Orlando, Fort Collins, Denver, Charlotte, (and one other that I'm forgetting) since the PRs almost a year ago (10 January 2019).
