It'd certainly be worth trying. While the combination of meat and seafood may seem strange, consider the Italian classic, vitello tonnato. Which is a poached veal roast, cooled and sliced, and covered in a mayo-like sauce made of tuna. I once made it with a turkey breast, and liked that even more than with veal.
