Thanks, well Eastern European diets are definitely different than the West.

I remember my ex-wife's mother would take salt pork and cover it with salt and stick it in the freezer. The pork fat would get infused with the salt and then be sliced thin and eaten with Russian mustard. It was quite good but, definitely the cholesterol meter would peg. On the flip side, the reason folks in the colder regions eat mostly fat if for the calories. case in point; Why do Eskimos prefer to eat blubber vs. meat? Blubber has more energy, meat (especially lean meat) doesn't have that many calories.

On the flip side of that, you don't see very many overweight Eastern Europeans because they do walk a lot. At least that's what my experience is from visiting Ukraine and Russia.
