if a product in inventory has not been sold, it's supposed to be subtracted from "cost of goods sold".



That is one of the most hilariously uninformed statements I've ever seen posted. Learn some accounting before you make claims like that. I spent 18 years at IBM as an expert on ERP (business accounting) software with a special focus on Logistics (Inventory Management) before these even became buzzwords. All any simple minded person has to do is pick apart the meaning of the words "Cost" (i.e. Value) of "Goods" (products/inventory) "Sold" (i.e. no longer in Inventory). You subtract sold products from inventory not inventory from sold products. SMHLMAO
