Because it's cheaper and the palm oil lobby is ferocious. Somewhere in the back of my mind, I think Suharto's kids own most of it? And coconut oil has been downgraded by the AHA. Too bad, since I loved doing Asian pancakes with coconut oil. I switched back to the good old standby, Olive Oil.
