Absolutely not. Oxtail is terrific. Very rich and gelatinous. Something else that would be good with polenta. Or mashed potatoes, maybe.
And fegato alla Veneziana is excellent. Though as noted, I'd use calf's liver rather than beef liver.
Wait!! He didn't tell us whether he got sweetbreads with his cow. Sweetbreads are just wonderful. A little difficult to deal with, but well worth the trouble.
