You should experiment with cooking your chili in the oven. I find I really prefer the result. And as I said, it doesn't take as long. Maybe two hours for the meats to cook, and then another hour with the beans. As opposed to five or six hours on the stovetop, and another hour or more to clean the pot.
I cover it while it's in the oven. If you take the lid off, you might have to add more liquid now and then.
If you're wondering why I need THAT much chili, it lasts for a long time. I freeze it in individual portions. It lasts a long time. Always available when I just want Something in a Bowl.
