Interesting statement: "patent is worthless". Considering they are selling petri plates because of the patent then that would mean the patent is not worthless. If large companies begin "bidding" on this "disruptive technology" it will be because it is valuable to them. How would there be a "piece" missing? It's a complete patent for a real and valuable technology.

You state: "if it's worth it to put your product in inert gas vacuum / bubblewrap, this patent won't stop anyone".

The product is specifically petri plates in an inert gas charged vacuum environment. There is no mention of bubble wrap.

A patent provides legal rights. Anyone violating a patent is violating the law. Those who don't respect the law would be the only people who wouldn't be stopped, but there are laws to deal with those types.
