In old building days of plastered walls the framework and lath weren't required to be true as the finishing plasterer covered up all the errors. You can't lay sheetrock directly on the studs as it reveals the imperfections of the wall.

I feel your pain. Try dealing with a house that is over 200 years old and the laths are actually split then horsehair plaster.
