Damn if I haven't encountered the bane of laying new drywall on old previously plastered walls: Crooked, bowed and what I call vertically challenged walls.

In old building days of plastered walls the framework and lath weren't required to be true as the finishing plasterer covered up all the errors. You can't lay sheetrock directly on the studs as it reveals the imperfections of the wall.

I have to shim low spots and cut away high spots along a 20' wall.

I bought a product I've used before at Home Depot to build up the concave walls. It's strips of 1/16" X 1-1/2" X 36" heavy-duty paper that's tacked to the studs. Two pieces will give you 1/8" and so on. I've used it before but not on this scale.
