A variation to the idea: They could set up a warehouse to grow their produce in cities where they have multiple locations and in each Snakes have a video that shows/explains how their veggies are grown locally in the most sustainable/economical way. Put it by the front door, so when people are waiting for seating, checking out the menu, etc they can stare at it.

Its like your idea, but with less space needed... they could also discuss Snakes history, explain the GROzone tech in detail, promote the stock, etc.

... and possibly become a high end organic produce supplier for other restaurants as well.
