So by this logic, and continuing with my example of Ford violating a patent. If I was the patent holder, I could sue Ford, every taxi company that uses Fords in their fleet, every Uber driver that drives a Ford and every catering company that delivers food using a ford van because they are providing a service using a vehicle that violates my patent?

How about another angle on this? What if Microsoft included code in it's operating system that violated an Apple patent? Would every business that uses Microsoft Windows server be in violation of that patent and need to be pay royalties to the patent holder? Or would Microsoft need to pay these royalties because they manufactured the product? I know Microsoft pays royalties to many companies and I'd bet they've violated a few patents in their time, but I've never heard of businesses getting slapped for it.

I'm 100% on Cisco getting sued here and I'm surprised that Motorola was not sued since they make most of the cable modems. If I were one of these cable companies and I lost, I'd definitely sue my equipment manufacturer for the loss from using their equipment since they did not do their job properly in vetting the technology before selling me this headache.
