Jesse, I submit it was Not the screw oil process that changed dietary habits, rather it was the invention of the hydrogenation process. It was originally designed to help make soap, by turning liquid fats hard, but was the beginning of CRISCO. Partially hydrogenated vegetable oil. This started in circa 1912, and grew from there exponentially. By making the veg oil hard, it was able to be added to processed foods, and helped lead to the supermarket foods you refer to. So we replaced lard with crisco, butter with margarine, and guess what? It increased heart disease, not reverse it. Now we know Trans Fat is bad, we are still fixated on cholesterol, we hope that Reduce IT tells us that we will have a new tool to measure our artery health, EPA:AA ratio, and will know how to correct it/
