I heard the same thing 20 minutes a pound. But we never gave it extra time. I think that is only for soccer.. The funny thing is I always tent my bird for the first couple of hours then untent and raise up the temp to brown the bird. Yes I do baste, I don't brine and I cook with a meat thermometer except for steaks which I cook by touch. My wife is still trying to figure out how I know when a steak is medium rare.
