Toasted Coconut Marshmallows
Recipe Summary

Yield: 20 to 40 marshmallows
7 ounces sweetened shredded coconut, toasted
1 recipe Homemade Marshmallow batter, recipe follows
Confectioners' sugar
Sprinkle half the toasted coconut in an 8 by 12-inch nonmetal pan. Pour in the marshmallow batter and smooth the top of the mixture with damp hands. Sprinkle on the remaining toasted coconut. Allow to dry uncovered at room temperature overnight.
Remove the marshmallows from the pan and cut into squares. Roll the sides of each piece carefully in confectioners' sugar. Store uncovered at room temperature.
Homemade Marshmallows:
3 packages unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
1 tablespoon pure vanilla extract
Confectioners' sugar, for dusting
Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.
Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees F on a candy thermometer. Remove from the heat.
With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.

2 cups Bisquick® baking mix - low-fat okay
2/3 cup milk - low-fat okay
1/2 cup shredded cheddar cheese - low-fat okay
1/4 cup butter or margarine - melted
1/4 tsp. garlic powder
-Combine Bisquick®, milk, and cheddar and beat with a wooden spoon for about 30 seconds.
-Spoon on to greased cookie sheet. Smooth tops down with spoon.

Brickle Tickle Sweet Potato Pie
For Crust:
2 cups All-Purpose Flour
1 teaspoon salt
1 teaspoon sugar
3/4 cup Butter, chilled
5 teaspoons ice water
For Filling First Layer:
1/2 cup sliced almonds
2 Tablespoons maple syrup
2 Tablespoons brown sugar
For Filling Second Layer:
1 1/4 cups mashed, baked sweet potato
2/3 cup granulated sugar
1/4 cup maple syrup
3 egg yolks
1/2 cup heavy cream
6 Tablespoons Butter, melted
1/2 cup toffee bits
1 teaspoon vanilla extract
For Topping:
3 egg whites
1/8 teaspoon salt
1 jar (7 ounces) marshmallow cream
For The Crust:
Combine flour, salt and sugar in a bowl. Cut in butter using a pastry blender until all flour is bleded in to form pea-sized chunks. Sprinkle water over mixture, one tablespoon at a time, and toss with a fork until dough will for a ball.
Divide dough: 2/3 of dough for the crust and 1/3 of dough for the leaves around the crust. Press dough to make 2 pancakes. Lightly flour surface and rolling pin. Roll larger pancake into a circle to fite a 9-inch pie plate. Fold dough into quarters and unfold and press into pie plate. Roll other pancake and cut leaves to place around outer crust using ice water to attach. Cover crust with plastic wrap and place in refrigerator while preparing filling.
For the First Layer:
Combine almonds, maple syrup and brown sugar in a medium saucepan over medium-high heat. Stir gently until mixture comes to a full boil. Boil 1 minute. Turn out onto waxed paper and cool.
For Second Layer:
Heat oven to 350ºF. In a medium bowl, combine sweet potatoes, sugar, maple syrup, egg yolks, heavy cream, melted Butter, toasted coconut, toffee bits and vanilla. Mix until well blended. Set Aside.
For Topping:
Beat salt and egg whites in a medium bowl until soft peaks form. Add marshmallow cream gradually. Beat until stiff peaks form.
Assemble the Pie:
Remove pie crust from fridge. Crumble first layer and sprinkle over bottom of prepared crust evenly. Gently pour second layer over first layer. Bake at 350ºF for 45 minutes.
Increase oven to 375ºF. Spread topping over filling, covering completely and sealing to edge of pie. Bake at 375ºF for 8 to 10 minutes, until lightly browned. Sprinkle with additional toasted coconut and serve. Store left-overs covered in refriderator.

Prep time: 35-40 minutes
Bake time: 35-40 minutes
Makes 1-9" pie
Filling
1/4 cup vegetable shortening
1 pound sirloin steak, trimmed and cut into 1/2-inch cubes
1/2 cup 1/2-inch diced onion
1/2 cup 1/2-inch diced carrot
1/4 cup tomato paste
1 teaspoon dried basil leaves
1 teaspoon dried thyme leaves
1 teaspoon garlic powder
2 cups beef broth
4 1/2 cups frozen diced potatoes
1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup frozen green peas, thawed
Salt and pepper to taste
9-inch Double Crust
For filling, melt oil in large saucepan. Add steak. Brown on medium-high heat. Add onion and carrots. Cook until onion starts to brown, stirring often. Add tomato paste, basil, thyme and garlic powder. Cook 2 to 3 minutes, stirring constantly. Add broth and potatoes. Reduce heat to low; cover and simmer until potatoes are cooked through but still firm.
Dissolve cornstarch in water. Add to saucepan. Cook and stir until thickened. Remove from heat. Stir in peas. Cool to room temperature. Taste and season with salt and pepper.
For crust, heat oven to 375ºF. Prepare and press bottom crust into 9-inch deep-dish pie plate or casserole. Spoon in filling. Moisten pastry edge with water. Cover pie with top crust. Cut slits in top crust to allow steam to escape. Bake for 35 to 40 minutes or until browned. Serve hot.

Rice and Merkel discuss CIA row
Mrs Merkel is keen to improve relations with the US
US Secretary of State Condoleezza Rice has met German Chancellor Angela Merkel for talks dominated by reports that CIA planes flew terror suspects via Europe.
Mrs Merkel told a joint news conference that democratic rules should be adhered to, but added that intelligence services must be able to do their job.
Ms Rice reiterated that the US does not carry out or condone torture.
The CIA flights and reports that the US spy agency ran secret prisons in Europe is set to dominate Ms Rice's tour.
Her next stop, Romania, is one of the countries that human rights activists believe housed a CIA secret prison - a charge the Romanian government denies.
Ms Rice has refused to address claims of secret prisons where suspects are said to have been interrogated without reference to international law.

In Berlin, Ms Rice and Mrs Merkel sought to dampen down the discussion about alleged CIA practices, the BBC's Ray Furlong reports.
Mrs Merkel said Ms Rice had given "important" reassurances that the US would use "every lawful means" to protect citizens from the threat of international terrorism.
Ms Rice said the US respected the sovereignty of its partners, adding that the US had an obligation to defend its people and would use every lawful means to do so.
"We will live up, in the United States, to our commitments under our laws, and to our international obligations," she said.

The new German chancellor came to power pledging to improve links with Washington and emphasising the importance of the war on terror.

Ms Rice's trip, which will also take in Kiev and Brussels, follows claims from Germany that it has a list of more than 400 CIA flights and landings on its territory.
Before she left the US, Ms Rice admitted that terror suspects were flown abroad for interrogation but denied they were tortured.
She said suspects were moved by plane under a process known as rendition, and that this was "a lawful weapon".
A leading US-based human rights group accused Ms Rice of seeking to "mischaracterise" the true nature of rendition.
"Secretary Rice made extra-legal rendition sound like just another form of extradition," said Tom Malinowski, a Human Rights Watch official in Washington.
"In fact, it's a form of kidnapping and 'disappearing' someone entirely outside the law."
New revelations
The controversy surrounding claims of covert CIA operations on foreign soil has been swirling for weeks.
In Germany, it has been alleged that some German officials knew about the secret flights.
According to media reports, former German Interior Minister Otto Schily was informed last year by the US about a German citizen seized in Macedonia and then flown to a prison in Afghanistan, where he was kept for five months.
Mr Schily has not commented and the ministry says it is investigating.
Meanwhile, ABC News claims the CIA moved 11 top al-Qaeda suspects from prisons in eastern Europe to a new facility in North Africa last month.
Current and former CIA members reportedly told the US channel the move was carried out hurriedly ahead of Ms Rice's visit to Europe.

Lawsuit targets Xbox 360 console
The Xbox 360 has sold an estimated 75,000 units in the UK
Microsoft is being sued over its new Xbox 360 by a Chicago man who alleges the next generation console has a design flaw.
The man behind the class action suit, Robert Byers, argues the power supply and processors in the Xbox 360 overheat, causing it to freeze.
Microsoft has said it will not comment on the pending litigation.
But in November it acknowledged there were problems in an "isolated" number of Xbox 360s.

Microsoft's box is the first of a new generation of games consoles, with greater processing and graphical capabilities than existing machines.

By launching before its rivals, the software giant has stolen a march on Sony and Nintendo, which are planning to release their own machines next year.
The Xbox 360 went on sale in the UK on 2 December, selling an estimated 75,000 units over the weekend, according to sales analysts ChartTrack.
It said the machine has become the fastest-selling home console ever in the UK.
The figure compares with estimated launch sales of 180,000 for Sony's PlayStation Portable in September and 87,000 for Nintendo's DS in March.
Analysts in the US estimate the Xbox 360 has sold some 400,000 units there.
"We are well aware that many gamers are disappointed to have not got their Xbox 360 on day one," said Chris Lewis, of Microsoft's home entertainment division in Europe.
"We are working around the clock to manufacture as many Xbox 360s as we can and are replenishing retail stores in Europe in the weeks coming up to Christmas."
Online complaints
Reports about problems with the Xbox 360 first surfaced shortly after the machine made its debut in the US on 22 November.
In online postings, owners reported that some of the consoles stopped working after a short bout of playing or crashed during a game and flashed up an error number.

Which console is best?
Some users posted video and photographs of the crash screens.
At the time, Microsoft spokeswoman Molly O'Donnell said the company had only received complaints about a "very, very small fraction" of all the consoles sold.
"With any launch of this magnitude, you're bound to see something happening," she said in November.
On Microsoft's support website for the Xbox, it lists 10 different problems associated with the new console as well as ways to fix the problems.
The company has offered to repair or replace any defective consoles.
The lawsuit, filed on Friday in a federal court in Illinois, seeks unspecified damages and litigation-related expenses, as well as the replacement or recall of Xbox 360 game consoles.
"The US is historically extremely litigious and highly opportunistic in these types of class action," said Forrester Research analyst Paul Jackson.
"If you are going to go after a company, you might as well go after one with lots of cash," he told the BBC News website.
But he added that reports of hardware failures and lawsuits would not be doing Microsoft any favours at a time when it should be trying to capitalise on the lead it has in a games market worth $25bn globally.

Oil giant Exxon returns to Libya
ExxonMobil is the world's largest energy company
ExxonMobil, the world's largest energy producer, is returning to Libya after an absence of almost 25 years.
It has signed a deal with Libya's state oil company to explore offshore energy deposits.
Both Exxon and Mobil once had significant business interests in Libya, producing the country's first oil field and shipping oil to market.
However, the companies pulled out of Libya in the early 1980s after US-Libyan relations deteriorated.
Sanctions lifted
All Western companies exited Libya in the late 1980s after the US and EU imposed trade sanctions on Colonel Gaddafi's regime, which they said sponsored terrorism.

The embargo was lifted last year.
Since then, Libya has offered exploration licences to a number of mainly European and Asian companies.
The agreement with ExxonMobil covers the exploration of an area covering 2.5 million acres in the Cyrenaica Basin, one of the country's largest energy fields.
Although Libya is estimated to have proven oil reserves of 36 billion barrels, only a quarter of its territory has existing exploration contracts.
"We are pleased to be back in business in Libya," said Phil Goss, president of ExxonMobil Libya.
"We look forward to working with the Libya National Oil Corporation and Libyan government to achieve great successes in Libya once again."

US army drops Iraq murder charges
The US military has investigated several claims of unlawful killing
The US army has dropped all charges against an officer accused of murder while in command of a platoon in Iraq.
The officer, 2nd Lt Erick Anderson, 26, was charged in 2004 after two soldiers under his command alleged he gave permission to kill Iraqi civilians.
One has since refused to testify and the other has changed his story.
The charges against Lt Anderson were brought after four platoon members were convicted of killing Iraqis in the Sadr City area of Baghdad.
Investigating officers said that all charges against Lt Anderson had been dismissed and no further inquiries would be carried out.
"Today's a pretty good day," Lt Anderson told the Associated Press.
"Right now, shock and awe is pretty much still in effect."
He had faced a possible life sentence if convicted on two charges of murder and conspiracy to commit murder.
He also faced charges of dereliction of duty, giving a false statement, and conduct unbecoming an officer.

England seeded for 2006 World Cup
England have been placed among the top eight seeds for the 2006 World Cup.
Sven-Goran Eriksson's side are in a top pool of hosts Germany, holders Brazil as well as Argentina, France, Italy, Spain and Mexico.
England will now avoid meeting those countries in the group stages when the main draw for the tournament is made in Leipzig on Friday evening.
Under the seeding system used by Fifa, England came out second to Brazil and Italy narrowly beat the US into eighth.
Fifa's ranking co-efficient meant that performances at the 2002 World Cup, when England reached the quarter-finals, were given twice as much weight as at 1998.
They also took into account a country's world ranking over the last three years.

Ecuador abandons vote on reforms
Ecuador has been dogged by political instability
The government in Ecuador has abandoned plans for a referendum on reforming the constitution to make the country more politically stable, officials say.
The decision was taken after the proposal was rejected by the Supreme Electoral Tribunal.
Interim President Alfredo Palacio wants to overhaul the political system which, he says, enjoys little public support.
Instability has led to three Ecuadoran heads of state being brought down by street protests in only eight years.
Mr Palacio's predecessor, Lucio Gutierrez, was ousted by Congress in April 2005 amid violent protests against his rule.
He is currently in detention following his return from exile in Colombia.
Opposition
Correspondents say that Mr Palacio took over at a time when the public's faith in politicians was rock-bottom, and he has been pushing for broad political reform since then.
But Congress has blocked his plans. The opposition, which controls the legislative branch, wants the changes to be less far-reaching.
Some lawmakers even threatened to seek his impeachment.
Mr Palacio issued a decree calling a referendum last week, after breaking off negotiations with Congress.
But following the Supreme Electoral Tribunal's rejection of his plan, the Ecuadoran Interior Minister, Galo Chiriboga, said the government had now exhausted all constitutional and legal possibilities.
Mr Chiriboga added that Mr Palacio's administration would respect the decision, even though it did not agree with it.

Black Bean Soup Recipe
Back in college, a great local cafe stayed opened into the wee hours ladling up their version of this stuff. The first time I slurped some of it down after midnight, I decided to make black bean soup my own tradition. Mine is hearty and smoky, and if it's lying around, I'll also throw in a can of beer for good taste and in keeping with the spirit of a good night on the town. Like the onion soup, you'll want to make this ahead of time so you're not faced with the prep-work when you and your friends just want to kick back and chow down after a long night. Using smoked bacon makes all the difference in the world because those beans are just begging for that rich, smoky flavor.
10 slices bacon, finely chopped
2 medium onions, chopped (about 2 1/2 cups)
6 garlic cloves, pressed
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 1/2 cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper
1 bunch cilantro
juice of 1/2 lime
Thinly sliced scallions, for garnish
Sour cream, for garnish
Grated cheddar, for garnish
Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.

2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, chopped
2 celery stalks, chopped
3 ounces thinly sliced pancetta, coarsely chopped
2 garlic cloves, minced
1 pound Swiss chard, stems trimmed, leaves coarsely chopped
1 russet potato, peeled, cubed
1 (14 1/2-ounce) can diced tomatoes
1 fresh rosemary sprig
1 (15-ounce) can cannellini beans, drained, rinsed
2 (14-ounce) cans low-sodium beef broth
1 ounce piece Parmesan cheese rind
2 tablespoons chopped fresh Italian parsley leaves
Salt and pepper
Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, celery, pancetta, and garlic. Saute until the onion is translucent, about 10 minutes. Add the Swiss chard and potato; saute for 2 minutes. Add the tomatoes and rosemary sprig. Simmer until the chard is wilted and the tomatoes break down, about 10 minutes.
Meanwhile, blend 3/4 cup of the beans with 1/4 cup of the broth in a processor until almost smooth. Add the pureed bean mixture, remaining broth, and Parmesan cheese rind to the vegetable mixture. Simmer until the potato pieces are tender, stirring occasionally, about 15 minutes. Stir in the whole beans and parsley. Simmer until the beans are heated through and the soup is thick, about 2 minutes. Season with salt and pepper, to taste. Discard Parmesan rind and rosemary sprig (the leaves will have fallen off of the stem.)

8 cups low-salt chicken broth
Freshly ground black pepper
2 (9-ounce) packages refrigerated cheese tortellini
2 tablespoons chopped fresh Italian parsley leaves
Pour the broth into a heavy large saucepan. Cover and bring to a boil over high heat. Season the broth with pepper, to taste. Add the tortellini. Simmer over medium heat until al dente, about 7 minutes.
Ladle the broth and tortellini into soup bowls. Top with parsley and Parmesan crisps and serve.
Parmesan Crisps:
1/2 cup grated Parmesan
Preheat oven to 400 degrees F.
Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
Bake for 3 to 5 minutes or until golden and crisp. Cool.
Yield: 8 to 10 crisps

1 teaspoons fine salt

Bring all ingredients to room temperature.
Beat the butter and lemon zest with an electric mixer at medium speed until smooth, about 30 seconds. Slowly beat in the egg yolk and cream.
Whisk the flour, pecorino, 1/4 cup of the Parmesan, sugar, rosemary, salt, and nutmeg together in a bowl. Gradually add the flour mixture into the butter mixture while mixing slowly. Scrape down the sides of the bowl, then beat on medium speed to make a slightly sticky dough.
Fill the cookie press with the dough. Assemble the press with the desired disk shape (see cook's note), and press cookies onto ungreased baking sheets. Leave about one inch between cookies. Sprinkle with the remaining 1/4 cup Parmesan and refrigerate cookies for 20 minutes.
Preheat oven to 325 degrees F.
Bake cookies, rotating pan halfway through, until golden, the cheese browns a bit, and the cookies smell nutty, about 20 to 25 minutes. Briefly cool the cookies on the baking sheets, then transfer to racks to cool. Serve or store in a tightly sealed container for up to 1 month.
Cook's Notes: These freeze beautifully. Press the cookies out into desired shapes on cookie sheets and freeze. Transfer frozen cookies to a plastic bag, seal, and keep frozen for up to 1 month. When ready to bake, lay out frozen cookies on cookie trays and bake from frozen for 25 minutes.
Some disk shapes work better than others. Since this is savory cookie, we liked the cutters that result in a cracker shape cookie, like the ribbon, clover. Stars and and snowflakes work, too.
