* 1 cup of fine cracked bulghur wheat * 1 ½ cup of warm water * 2 bunches of parsley * 2 bunches of scallions * small bunch of fresh mint (1/2 cup) or * 4 tablespoons of dried mint * 5 medium tomatoes * 5 lemons * ½ cup olive oil * 1 teaspoon salt * 1 teaspoon pepper (optional)
Chop parsley and mint in processor. Empty processor frequently. Chop by hand tomatoes and scallions. Soak 1 cup of fine cracked bulghur wheat in luke-warm water until liquid is 90% absorbed (approx. 15 minutes), drain off excess water and place in bowl with greens and tomatoes. Add juice of 5 lemons, olive oil, salt and pepper. Mix all ingredients and chill.
