Sounds to me like Kim has a specific strain of mulberry he wants to deal with since that is what would grow in soil.
It is also very common practice in silk farming. Everything a worm eats can effect the silk. Kim has most likely fed a variety of mulberry to the worms and tested the resulting silk and found a particular tree he wants to use for consistency.
