Because it is deadly. They chose to do Listeria first as they wanted perfection on the first try which they have accomplished. It was not just about the pathogen, is was also about the machine, software, etc.. Once the machine, software, etc., is tested and approved along with the one pathogen there is no more need to re test the machine. They just need to test the pathogens going forward. Smart move, as if for instance the software failed and they were submitting all three pathogens, all would have failed together.. Since they knew they had the Listeria in the bag (which was killing people, see Jensen Farms.) they felt it better to go with one on the first go round, is my understanding.
