Irregardless, I'm almost 200 years old so I consider it a double-negative ;-)
Just had shavings off a smoked pork chop for appetizers, and smoked salmon pasta for dinner. We used our friend's home-smoked stuff from their cabin in Alaska. But I need to try it with SMKY salmon, then I'll post the recipe. It's supremely addictive.
If SMKY can hold up next to the homemade Alaskan stuff, then we need to add this recipe to the cookbook for SMKY eaters. But it's likely going to fall into the "Smoky Salmon Is Healthy But This Recipe Is Not So Much"… cream, tons of fresh micro-filed pecorino romano, fresh basil, peas and lots and lots of garlic.
