The real way to cook french frys:

Pre cook your potatoes in a crock pot or oven then put them in the refrigerator to cool off. If you do this a day ahead they have enough time to firm up.

Then slice into chips big or small.

Then fry them up like you normally would.

The difference between pre cooking and deep frying them raw is they cook faster and are much much tastier.

When trying to cook raw french fry's they tend to burn up because you have to cook them longer to get the inside done.

This was shown to me by a French woman many years ago.

Cooking the potatoes in a slow cooking crock pot allows the flavors to cook into the potato and then deep frying seals them in.

If you can get some New Zealand tomato sauce you now have gormet chips or just serve with gravy on top.

If you want to make fish and chips then I would suggest you use rice flour on the fish so they are nice and crispy....then you would need some malt vinegar to make it original.
