Night color will be impossible unless its false color. In any case, materials react differently to IR and real color is impossible at night.
Inherently colors are within the range of the visible so the camera will likely be a color camera by day and B/W at night.
One remote possibility would be to use some kind of image intensifier, but it would be very expensive.
