A friend of mine had access to an iTouch for a day - he thought it was very cool, but the limitations bothered him. So, it depends on your usage.
The one limit that he mentioned was that he wanted to save a web page (the page, not the url/bookmark) so he could view it later when he was out of wi-fi range. Seems reasonable, but AFAIK - no can do.
It seems to me that no document storage will be a deal breaker for some - others won't care, but I do hope Apple starts addressing more of the issues you people have highlighted.Some of the holes just seem inconceivable at this stage.
