I agree with your statement "knowing a little about something can lead to large assumptive errors"...and I believe you have made one here.
Actually, I understand the concepts quite well. Perhaps it is you who underestimates the capability of the US government and some other governments as well.
For the past few years, crypto currencies have been like the wild west, with little regulation. The US government is about to start regulating crypto and perhaps taxing it and/or using it to monitor all transactions, which is one of the goals.
It is also much easier to steal $$ electronically via hacking. In fact, millions of $$ have already been stolen from cryptocurrency is, so it is not the safe haven many believe it is.
Despite your false belief that the Blockchain cryptos are safe and outside the grasp of the government, you are incorrect. You mention that although governments have regulatory capabilities but will have a hard time regulating decentralized crypto currencies. So how are the Blockchain cryptos working out in China? China has outlawed cryptocurrency completely. If they are unable to regulate it or use it to promote the agenda they want, they simply ban it or outlaw it. That won't happen here because the US government will use crypto currency to their advantage.
Maybe you haven't noticed but there is a war on cash being waged. The government has been forcing/incentivizing financial transactions take place online. They want to tax all of the cash that flows in the underground economy and small businesses, which make up a large percentage of financial transactions.
Have you observed what Canada did recently with the truckers who protested the lockdowns? The government went after them financially. Many can not pay their mortgages or buy food and supplies due to the stranglehold the government has on the financial system. Are those folks circumventing the government controls with crypto?
At the moment, Russia may be circumventing some US sanctions by utilizing crypto and other methods. So they are using crypto to their advantage, at least for now.
So perhaps it is your "knowing a little about something can lead to large assumptive errors."
Never underestimate the capabilities of government. Things you are aware of that a government can do publicly are quite different than the capabilities a government has and uses privately behind the scenes.
