The problem is that antibodies are an adaptive response to the antigen encountered. When then antigen (viral protein changes), the antibody may not recognize the new antigen or with very low effect.

Partial antibody recognition/response is what typically allows us to have only minimal impact from each new influenza strain or mutation in the rhinoviruses and previously circulating coronaviruses.

Is the mutation is sufficient that is becomes essential a whole new virus, we could be very nearly back to square one.
