Why not just skip the turning electricity into hydrogen step?
My boat is totally off grid, too. My ballast is made of Optima Batteries.
PV panels keep them charged, and I can even generate my drinking water, the same way the boat in the video does. I just skip making and storing hydrogen, or the extra weight of the fuel cell.
Batteries may be heavy, but the hydrogen conversion, compression and storage equipment is even heavier.
I also don't need as many PV panels, because it takes twice as much electricity to make hydrogen.
