I thought about it a little bit today, Impossible Foods is certainly a strong possibility. I've been a vegetarian for 17 years, though I did fall off the wagon a few times...lol...but for the better part of 17 years I've been veggie, so I'm pretty aware of this industry.
If I were going to guess, I'd say the company that checks all the boxes for me would be Eat JUST, Inc.(formerly known as Hampton Creek Foods). Not as well known as Impossible Foods, but it has some big time investors, like Bill Gates and Li Ka-shing.
