I'm making this over the coming weekend - Irish to the Core - For epic-ly hot summer days, have a Celtic Blueberry Lemonade!

2 oz Boru Vodka (or if you prefer, Clontarf Irish Whiskey)
4 oz fresh lemonade
soda water
5 blueberries plus extra for garnish
3 mint Leaves, plus sprig for garnish

In a large glass, gently muddle blueberries with mint leaves and Boru Vodka. Fill with ice, add lemonade and stir to combine. Top with a spritz of soda water. Garnish with more blueberries and mint sprig. Sláinte!
