I live with two people who have Celiacs Disease (can't eat gluten) and there is a huge market for good gluten free food. Some of the gluten free food is so expensive, I can't believe it. We are talking $6+ for a small box of cookies.

If they can get some quality food out... they will be in a very lucrative market.

I know California pizza Kitchen did great selling frozen pizza.. I think GIGL can do way better selling $5+ boxes of Mac & Cheese.
