Itanium lost because Intel wouldn't/couldn't support two server architectures, and they couldn't leave the x86-64 front undefended.

Pure and simple... Oracle was a sideshow.

All Unix server sales were badly hit - Power, SPARC, and Itanium.

See this report from 2009. Itanium plummeted nearly 30% at HP they were only saved by their Xeon sales. That was far larger than the overall Unix server decline though Sun SPARC were also in freefall and about to be taken over by Oracle.
