A small museum design firm in Portland OR uses Mac computers in its design and graphic production departments. Still using OS 9 and Quark.

I work in print and promotions industries so I run into quite a few Mac shops. Met someone in chat who works for Best Buy's internal advertising and design offices in Canada. She told me they got new G4s last year and were awaiting Quark's release to up all to OSX. She did say that the majority of the office is PC based, for accounting, office apps and Outlook Exchange, but that the graphics, layout and design folks were Macolytes
