Learned response, sludge. As you point out, despite the exotic image of commodities, they are far more predictable than mischief ridden equities.
With physicals it's about ending stocks + new crop, projected consumption and then running linear regression tests to obtain the expected price parameters. Take the median expected value and start averaging down from there.
