I wish I knew the answers to your questions but I don't.

The way I look at it is the more hash power the more bitcoins, and since the hash power is going up I'M HOPING it's due to the new servers being added.

Each server ax you call them is a mining rig, also known as a worker. The worker number can be unlimited and as many as their are people to add them to the pool. The more, the better.
