"Excess industrial heat" I would guess that the Welch’s plant has plenty of waste heat. I am sure they pasteurize their product, which means heating it. They must kill all the yeast to stop fermentation. They must have plenty of refrigeration that produces waste heat and many other sources such as waste building heat. Also once the process is started some of the product could be siphoned off to heat the waste. I don't think the heating will be a problem in this instance. Maybe in areas that lack the industrial processes that are at Welch's could be an issue but this indication could be fantastic; all the hydrogen produced could run generators that supply the entire plant with electricity. How many food processing plants are there that could use this process?
