Tomato and strawberry plants are huge producers once they get going. They might have to hire twice as many pickers.
You seem to have more knowledge than most about trtc, have they ever considered aquaculture? Adding fish to the mix could cut fertilizer costs a little plus the fish could prove to be a lucrative revenue stream. I bet the Casino's in Vegas would pay a premium for a steady supply of fresh fish.
