My New Year's resolution????
Make cheesecake at least once a month - Yummmmmmmmmmmmmm
3 - 8 oz cream cheese (softemed at room temp for 1 hour)
1 - 16 oz sour cream
3 - eggs
1 - cup of sugar
1 - dash of vanilla extract (I use lime extract for keylime taste)
2 - graham cracker crusts
Pre-heat oven to 425
In a stand mixer bowl, combine cream cheese, sour cream - start mixing on low - add eggs - slowly add the cup of sugar - dash of vanilla(or other) and let mix for about 5 minutes to get it well combined.
Pour evenly into the 2 pie crusts and bake in oven for 35 minutes - it should puff up and the edges should brown - cracking is normal -
Remove from oven - let cool - refrigerate once cooled -
