She SHOULD have a disclaimer, since she is a mega marathon/long distance runner. She is probably under the care and direction of one or more physicians and trainers.

I don't think she should be pulled as a spokeswoman, just some open dialogue about her special conditions and physical needs that are highly unusual. Remember Michael Phelps, he ate 12000 calories a day, when in training and competition. He was still a spokesman for eating healthy, normal breakfast. I think the public gets it!
