heat transfer fluids have one or more of (a) high boiling point (b) low chemical reactivity (c) high heat capacity and (d) low viscosity.

Water is the original HTF and glycol is just an additive to extend its range.

Mineral oil is an HTF and a lubricant.

Silicone oils were the 1980's big leap forward.

Fluorinated hydrocarbons and ethers are the modern high end versions.
