An intermittent mine means they do not mine every day.Nothing to do with seasonal stuff.Take note of the word mine thats not to say process ore.
Mine means to dig ore from the ground
Process means to separate gold from the ore.
So an intermittent mine does not dig ore everyday but can still process ore everyday.Note the stockpile they have beside the mill.They Mine the ore bring it to the stockpile then process it inside the mill.They do not need to mine everyday in order to process everyday.
