How true, if it were microscopic we could see and not eat it. I have been also thinking that with the ease and economy of testing with the MIT 1000 it will make the whole food handling process safer. Being able to economically test surfaces, machinery, storage areas, trucks and all things that touch the food as well as the food itself. This can improve standard operating procedures (SOP) to assure proper health standards and cleaning procedures are being followed. Looking at SOPs and monitoring those procedures will limit the chance of contamination. The testing of the whole process will reduce liability and save money in stoppages and slow down of business operation caused by tainted product.
