It's ok, I make my lunch lunch the night before. If the pathogen are big enough to see I usually don't eat the food anyway. What the MIT 1000 finds are the little ones which are microscopic and need to be cultured. See I know. I also know that most of the cultures will not have microscopic pathogens, and that is why most of us don't get sick. The USDA is worried about the few that get sick and the ones who die. That is why food needs to be laser scanned before the peanut butter and bananas makes it to my bread.
