Per 10Q (July 3, 2011), Whole Foods operates 297 stores in 38 states and District of Columbia. (In Canada six stores; in U.K. five.)

Per 10Q (August 5, 2011), Cheesecake Factory operates 165 restaurants: 151 under mark The Cheesecake Factory®, 13 under mark Grand Lux Cafe®, one under mark RockSugar Pan Asian Kitchen®.

Those two chains (WF & CF) account for 462 stores in USA. Reportedly, Eco-Safe units are installed in 13 WF and in three CF--with five or more CF sited for ESS units. Both chains are enormously profitable firms even in this recession and love Eco-Safe machines! The big contracts are in their minds. How could they not be? Bottom line: Eco-Safe can save them a lot of money, not to mention cut to low probability their risk of big lawsuits and worse if food contamination strikes. Why should one location enjoy cost-savings and greatly reduced liability and not the other? That question must also be in their minds. Once one of these two chains goes whole hog on ESS installations, it arguably will send a shock wave through the restaurant and grocery industries. What is this little Eco-Safe Systems, and what do they have that they should sell to the Big Boys their wares in large orders? Then, soon after, they will all want one.
