So I was sharing a little SMKY information with a co-worker, and he expressed some reservation about the BBQ Diner concept, on the grounds that the meat would be pre-smoked, and nothing would be cooked on-site. I asked if he ever ate at Subway, which he said yes to. I asked if he was bothered that the roast beef, ham, turkey, chicken, etc that he puts on his sub is not cooked and sliced at Subway, but is instead delivered to the individual restaurants already like that. Response: "But that's different, it goes on a sandwich." Point being, if anyone, whether they be bashers here or family/friends unsure about the concept, expresses reservations about the BBQ Diner concept and the meat not being cooked on-site, there are certainly examples of successful restaurants that do the same thing.
