Gail, it,s not raw meat as you may think. We hang red meat to let it age no matter the place it comes from. I even buy yesterdays meat from krogers in the sale bin if it isn,t too old. Meat that is aged is most tender, as it ages. I let venison age, as it is on the hoof when i get the meat. The more aged the meat, the more tender.
