Seriously? What material is it made out of? That sounds pretty flimsy! How are they attached?

The base is constructed of 3/4in. material. Plywood or particle board. Depending on how much you want to spend. The sides look like 1/4in finished 1 side plywood. Once in place, the sides are 1 in. thick. The bottom slides into a groove in the face front and the top is secured with a commercial grade 3M adhesive tape.(I think) It stuck good enough, it was hard for me to remove the side. Check out the video at 1:13, when the actress is putting on the side. www.easytoinstall.com

How do they know which parts are required? Or would they just include all parts whether you use them or not? That doesn't sound particularly green or a cost savings...

Of course no matter what style you want, you have to buy the base, which comes standard in white, so if you are going with a white vanity, all you need is the white face front. The sides are already white and the doors are already hinged to the face frame.
If you want a different style (color) the package will include the two sides and the front. Seems pretty simple to me. They would package them by color.
How they'll be packaged is all speculation on my part but it seems to make sense.
I really don't understand your part about, how they will know what parts they will need? If you want black, buy the black 2 sides, face front package. If you want white, buy the white face front. That's it in black and white. Pun intended.
