Palmyra Atoll. I stopped in there for a few days about two years ago. They have a standing population of about eight people. You have to get a permit to anchor there. Part is owned by Nature Conservancy and part by US Gov. It's about as isolated as you can get. Full of sharks, manta rays and coconut crabs(google the crab). Edit: Oh yeah, lots of turtles and other stuff, too.
